Warm Baby Broad Bean Salad with Iberian Ham

The Baby Extra-fine Broad Beans 250 ml from Conservas Almanaque are a high-quality product, tender and full of natural nuances. In this recipe, we combine them with Iberian ham to create a light, tasty, and very easy-to-prepare warm salad. Ideal as a starter or gourmet appetizer, with the authentic essence of the Mediterranean diet.

Ingredients:

Preparation Method:

  1. Drain the broad beans and dry them carefully.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the chopped spring onion and lightly sauté until transparent.
  4. Add the broad beans and sauté for 2–3 minutes, avoiding breaking them.
  5. Add the Iberian ham and mix for a few seconds to release aroma without overcooking it.
  6. Adjust salt and pepper. If you want a fresher touch, add a few drops of lemon or vinegar.
  7. Serve warm, garnishing with mint or fresh parsley.

Chef's Tip:

For a more gourmet version, accompany the salad with a poached or truffled egg yolk. You can also serve it on a slice of rustic bread or add some shavings of cured cheese to enhance the contrast of flavors.
