Pedro Ximénez Pâté Montaditos with Caramelised Onion
Pedro Ximénez pâté montaditos with caramelised onion are a simple, elegant recipe, perfect to serve as an appetiser at special meals, dinners with friends or celebrations.
In this recipe we use Pata Negra Pedro Ximénez Pâté 110 g, a gourmet speciality with a smooth texture and a balanced flavour, with the sweet, aromatic touch characteristic of Pedro Ximénez wine. Its combination of nuances makes it ideal for preparing sophisticated tapas in just a few minutes.
Ingredients for 4 people:
- 1 tin of Pata Negra Pedro Ximénez Pâté 110 g.
- 8 small slices of rustic bread or pan de cristal (Spanish crystal bread).
- 1 large onion.
- 1 tablespoon of soft brown sugar.
- A dash of balsamic vinegar.
- Chopped walnuts.
- Extra virgin olive oil.
- Salt, to taste.
- Freshly ground black pepper.
- A few rocket or baby leaves to garnish.
Method:
- Slice the onion into thin strips and cook it gently in a frying pan with a little extra virgin olive oil over a low heat.
- When the onion is soft and translucent, add the brown sugar and a dash of balsamic vinegar.
- Cook for a few more minutes until the onion is caramelised and golden.
- Lightly toast the bread slices so they are crisp on the outside.
- Spread a generous layer of Pedro Ximénez pâté on each slice.
- Add a small amount of caramelised onion on top of the pâté.
- Finish with some chopped walnuts, a pinch of black pepper and a few rocket or baby leaves.
- Serve the montaditos freshly made to best enjoy the contrast between the crisp bread, the smooth pâté and the sweet touch of the onion.
Chef's tip:
For an even more special touch, add a few salt flakes just before serving, or pair these montaditos with a glass of smooth red wine or a vermouth.
You can also make them in a mini format for an appetiser board alongside cured cheeses, Iberian charcuterie and nuts.
