The dehesa: the ecosystem where the best Iberian ham is born

When we talk about 100% acorn-fed Iberian ham, we usually think of its flavor, aroma, or texture. However, much of its quality originates from an exceptional natural environment: the dehesa.

This landscape, characteristic of the southwest of the Iberian Peninsula, is much more than a forest. It is an ecosystem created over centuries in which nature, livestock, and sustainability coexist.

A unique landscape

The dehesa is mainly composed of holm oaks and cork oaks that produce the acorns that Iberian pigs feed on during the montanera.

In addition, it hosts great biodiversity and constitutes one of the best-preserved natural spaces in Europe.

The perfect home for the Iberian pig

The animals live freely, covering large areas of land daily in search of food.

This constant exercise promotes muscle development and contributes to fat infiltration, one of the most appreciated characteristics of Iberian ham.

A sustainable balance

The relationship between the pig and the dehesa is beneficial for both.

While the animals take advantage of the natural resources of the environment, they contribute to the maintenance of the ecosystem, helping to control vegetation and favoring the natural balance of the Mediterranean forest.

The origin of an exceptional product

Without the dehesa, the authentic 100% acorn-fed Iberian ham would not exist.

Therefore, preserving this environment also means protecting a unique gastronomic tradition that has made Spain a global reference in the production of Iberian products.
